TY - JOUR AU - พันธ์ภัทรชัย, เพ็ญวรัตน์ AU - สาลี, ณัฐธินี PY - 2021/08/20 Y2 - 2024/03/29 TI - ผลของสภาวะการฆ่าเชื้อด้วยความร้อนต่ออายุการเก็บรักษาผลิตภัณฑ์น้ำพริกหนุ่มบรรจุขวด JF - วารสารสมาคมวิศวกรรมเกษตรแห่งประเทศไทย JA - TSAEJ VL - 27 IS - 2 SE - DO - UR - https://li01.tci-thaijo.org/index.php/TSAEJ/article/view/250953 SP - 8 AB - <p>บทคัดย่อ</p><p>น้ำพริกหนุ่มเป็นอาหารพื้นถิ่นของทางภาคเหนือ ผลิตมาจากวัตถุดิบสด จึงทำให้อายุการเก็บรักษาสั้น งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของสภาวะการฆ่าเชื้อด้วยความร้อนต่ออายุการเก็บรักษาของผลิตภัณฑ์น้ำพริกหนุ่มบรรจุขวด ด้วยการใช้หม้อแรงดันไอน้ำ ที่สภาวะ 110 °C 15 นาที และ 120 °C 7 นาที เก็บรักษาที่อุณหภูมิห้อง เป็นระยะเวลา 24 สัปดาห์ จากผลการวิจัยพบว่า การใช้ความร้อนสูงส่งผลโดยตรงต่อคุณภาพของผลิตภัณฑ์น้ำพริกหนุ่ม สำหรับการเก็บรักษาที่ 0 สัปดาห์ตัวอย่างที่ผ่านการใช้อุณหภูมิ 110 °C 15 นาทีจะมีค่าสี L* a* b*เท่ากับ &nbsp;35.09 ± 2.05, 6.64 ± 0.79 และ 31.09 ± 2.47 ตามลำดับ ซึ่งดีกว่าการฆ่าเชื้อที่อุณหภูมิ 120 °C 7 mins นอกจากนั้น สมบัติทางกายภาพอื่นของทั้ง 2 สภาวะมีแนวโน้มลดลงอย่างมีนัยสำคัญทางสถิติ (p&lt;0.05) เมื่อทดสอบทางประสาทสัมผัส พบว่าการฆ่าเชื้อทั้ง 2 สภาวะ ที่อุณหภูมิ 110 °C 15 นาที และ 120 °C 7 นาที มีค่าความชอบโดยรวมสูงสุดเมื่อเก็บรักษาไว้เป็นเวลา 6 สัปดาห์ เท่ากับ 7.60 และ 6.80 ตามลำดับ ค่าปริมาณน้ำอิสระ ค่าความเป็นกรด-เบส ผลทางด้านจุลชีววิทยา เป็นไปตามประกาศกระทรวงสาธารณสุข (ฉบับที่ 355) พ.ศ.2556 เรื่องอาหารในภาชนะบรรจุปิดสนิท</p><p>คำสำคัญ: น้ำพริก, อายุการเก็บรักษา, ความร้อน</p><p>Abstract</p><p>Northern chili paste (Nam Prik Noom), northern Thai local cuisine, is generally made from fresh ingredient which result in shortening the shelf life. This research aims to study the effects of thermal sterilization conditions on bottled chili paste shelf life using autoclave. The experimental conditions were 110 °C for 15 mins and 120 °C for 7 mins then stored at room temperature for 24 weeks. The results revealed that high thermal condition affected overall quality of the chili paste products. At week 0, the L* a* b* values of the sample treated at 110 °C for 15 mins were 35.09 ± 2.05, 6.64 ± 0.79 and 31.09 ± 2.47, respectively, which was better than the sample treated at 120 °C for 7 mins. Moreover, the other physical properties of both conditions tended to decline significantly (p &lt;0.05). Sensory testing showed that the both condition at 110 °C for 15 mins showed the highest overall acceptance at 6-weeks storage at 7.60 and 6.80, respectively.
