VL - 4 IS - 1 SE - วิทยาศาสตร์ชีวภาพ DO - 10.14456/tjst.2015.11 UR - https://li01.tci-thaijo.org/index.php/tjst/article/view/31065 SP - 104-114 AB - <p><strong>บทคัดย่อ</strong><strong></strong></p><p>การศึกษานี้มีวัตถุประสงค์ในการสำรวจการปนเปื้อนของโคลิฟอร์ม (coliform) อีโคไล (<em>Escherichia coli</em>) และซัลโมเนลลา (<em>Salmonella</em> spp.) ในไข่ไก่ ไข่เป็ด และไข่นกกระทา ที่วางจำหน่ายในเขตอำเภอคลองหลวง จังหวัดปทุมธานี โดยสุ่มเก็บตัวอย่างไข่ 3 ชนิด ทั้งหมด 90 ตัวอย่าง แล้วทดสอบการปนเปื้อนโคลิฟอร์มและอีโคไลด้วยแผ่นฟิล์มเลี้ยงเชื้อสำเร็จรูป และทดสอบการปนเปื้อนซัลโมเนลลาด้วยการเพาะแยกในอาหารเลี้ยงเชื้อ xylose-lysine deoxycholate agar (XLD) และ modified semi-solid rappaport vassiliadis agar (MSRV) โดยยืนยันผลด้วยการทดสอบทางชีวเคมี (biochemical test) พบว่าตัวอย่างเนื้อไข่ทั้ง 3 ชนิด ไม่พบการปนเปื้อนโคลิฟอร์มและอีโคไล ส่วนบริเวณเปลือกไข่ทั้ง 3 ชนิด พบการปนเปื้อนแบคทีเรีย โดยพบเปลือกไข่เป็ดมีปริมาณโคลิฟอร์มและอีโคไลมากที่สุด สำหรับผลการทดสอบการปนเปื้อนซัลโมเนลลาพบว่าเปลือกไข่ไก่มีการปนเปื้อนร้อยละ 9 (4/45) และเนื้อไข่พบการปนเปื้อนร้อยละ 7 (3/45) ของตัวอย่างไข่ไก่ทั้งหมด ส่วนในไข่เป็ดพบการปนเปื้อนที่เปลือกไข่ร้อยละ 12 (3/25) และพบการปนเปื้อนที่เนื้อไข่ร้อยละ 8 (2/25) ของตัวอย่างไข่เป็ดทั้งหมด ส่วนเปลือกไข่และเนื้อไข่นกกระทามีอัตราการปนเปื้อนซัลโมเนลลามากที่สุดคือร้อยละ 15 (3/20) ของตัวอย่างไข่นกกระทาทั้งหมด การปนเปื้อนแบคทีเรียอาจเกิดจากหลายสาเหตุ ตั้งแต่การติดเชื้อของสัตว์ปีกร่วมกับปัจจัยที่เกี่ยวข้องอื่น ๆ เช่น ฟาร์มเลี้ยงสัตว์ การขนส่ง การเก็บรักษา การวางจำหน่าย ดังนั้นเพื่อความปลอดภัยด้านอาหาร ผู้บริโภคควรระมัดระวัง และลดความเสี่ยงการติดเชื้อซัลโม เนลลาจากไข่ควรรนำไข่ไปผ่านความร้อนในระยะเวลาที่เหมาะสมก่อนการบริโภค</p><p><strong>คำสำคัญ : </strong>ไข่; การปนเปื้อน; โคลิฟอร์ม; อีโคไล; ซัลโมเนลลา</p><p> </p><p><strong>Abstract</strong></p><p>The purpose of this study was to survey the contamination of coliform, <em>Escherichia coli</em> and <em>Salmonella</em> spp. in hen eggs, duck eggs and quail eggs in Khlong Luang district, Pathum Thani province. A total of 90 eggs were randomly collected and checked by visual examination. Then coliform and <em>E. coli</em> isolations were done by using 3M Petrifilm<sup>TM</sup> <em>E. coli</em>/Coliform Count Plate whereas <em>Salmonella</em> spp. was isolated using xylose-lysine deoxycholate agar (XLD) and modified semi-solid rappaport vassiliadis agar (MSRV). The positive results were subsequently confirmed with biochemical tests. The results revealed that the coliform and <em>E. coli</em> contaminations were not found in egg contents, but in the egg shells, with the highest number in duck eggs. <em>Salmonella</em> contaminations were found the highest percentage in both shell and content of quail eggs (15 %, 3/20), followed by those of duck eggs [12 % (3/25) and 8 % (2/25), respectively] and hen eggs [9 % (4/45) and 7 % (3/45), respectively]. Bacterial contamination in eggs might involve with various causes including infected avians, farm management, transportation, storage and selling. According to food safety, consumers should be aware of salmonella infection and avoid its risk by hygienic food processing through suitable heat and time.</p><p><strong>Keywords: </strong>egg; contamination; coliform; <em>Escherichia coli</em>; <em>Salmonella</em></p> ER -
