สมบัติเชิงหน้าที่ของคอมบูชาที่ผลิตจากสมุนไพร 4 ชนิด (Ventilago denticulata Willd, Salacia chinensis L., Diospyros variegata Kurz. และ Ventilago calyculata Tul.)

บทคัดย่อ
งานวิจัยนี้มีวัตถุประสงค์เพื่อใช้ประโยชน์จากสมุนไพร 4 ชนิด ได้แก่ รางแดง (Ventilago denticulata Willd) กำแพงเจ็ดชั้น (Salacia chinensis L.) พญารากดำ (Diospyros variegata Kurz.) และเถาวัลย์เหล็ก (Ventilago calyculata Tul.) โดยการศึกษาสมบัติเชิงหน้าที่ของคอมบูชาสมุนไพร พบว่าคอมบูชาสมุนไพรที่ผลิตจากน้ำชาสมุนไพรเข้มข้นร้อยละ 37 (น้ำหนักต่อปริมาตร) ทั้ง 4 ชนิด สามารถนำมาผลิตคอมบูชาที่มีสมบัติเชิงหน้าที่ ได้แก่ ฤทธิ์ต้านอนุมูลอิสระสูงสุดจากคอมบูชารางแดง (615.54 ± 0.021 ไมโครกรัม/มิลลิลิตร) ปริมาณสารประกอบฟีนอลิกทั้งหมดสูงสุดจากคอมบูชาเถาวัลย์เหล็ก (2.01 ± 0.059 ไมโครกรัม/มิลลิลิตร) ปริมาณกรดแอซิติก ในคอมบูชาสมุนไพรทั้ง 4 ชนิด อยู่ในช่วง 0.451 ± 0.0005 ถึง 0.625 ± 0.0036 มิลลิกรัม ส่วนปริมาณสารประกอบฟลาโวนอยด์ พบว่าคอมบูชาพญารากดำมีค่าสูงที่สุด (1.149 ± 0.039 มิลลิกรัม/กรัม) และคอมบูชากำแพงเจ็ดชั้นมีค่าต่ำที่สุด (0.077 ± 0.004 มิลลิกรัม/กรัม) ปริมาณแอลกอฮอล์ทั้งหมดที่มีค่าสูงสุดในวันที่ 7 คือร้อยละ 2.95 (% ABV) ในการหมักวันที่ 7 ปริมาณของแข็ง สารอนินทรีย์ และอินทรีย์ทั้งหมดที่ละลายน้ำ อยู่ในช่วง 170.00-212.50 กรัม/ลิตร ปริมาณจุลินทรีย์ทั้งหมด ปริมาณแบคทีเรียแอซิติก ปริมาณยีสต์ เป็นไปตามมาตรฐานของผลิตภัณฑ์อาหาร (6 log CFU/มิลลิลิตร) ไม่พบปริมาณน้ำตาลรีดิวซ์ และน้ำตาลธรรมชาติ เช่น กลูโคส ฟรุกโตส และซูโครส ในหน่วย กรัม/100 มิลลิลิตร ซึ่งอยู่ในเกณฑ์ที่ยอมรับได้สำหรับเครื่องดื่มหมักเพื่อสุขภาพ
