Abstract

A study on suitable harvesting index of Kew mangoes CV. SK 007 and SK 002 for pickling was conducted in 1987 and 1988 respectively at the Sisaket Horticultural Research Center. SK 007 mangoes at harvesting index of 11, 12, 13, 14 weeks after anthesis and SK 002 mangoes of 11, 12, 13, 14, 15, 16 and 17 weeks after anthesis were harvested and pickled in a 10% brine solution with 0.1% sodium benzoated. The fruit qualites were initially analysed on arrival and at subsequent intervals during pickling. Sensory evaluation of SK 007 pickled mangoes was assessed 1 mouth after 1, 3, 5 and 7 mouth for SK 002 pickled mangoes. Results showed that the mangoes harvested at 11 weeks after anthesis were significantly poorer in quality and acceptability than those of more nature fruits. The earliest harvesting time for SK 007 and SK 002 were 12 and 13 weeks after anthesis respectively. However SK 002 harvested at 17 weeks tended to be the best. It was found that the picking period did not affect picking quality.
