รูปแบบการอนุรักษ์อาหารพื้นเมืองของชุมชน โดยใช้เทคโนโลยีสารสนเทศ อำเภอบ้านลาด จังหวัดเพชรบุรี

Abstract

การวิจัยครั้งนี้มีวัตถุประสงค์ 1) เพื่อศึกษาความรู้เรื่องอาหารพื้นเมืองของชุมชน 2) เพื่อพัฒนารูปแบบการอนุรักษ์อาหารพื้นเมืองของชุมชน โดยใช้เทคโนโลยีสารสนเทศ อำเภอบ้านลาด จังหวัดเพชรบุรี 3) เพื่อหาความพึงพอใจของการใช้งานจากรูปแบบ การอนุรักษ์อาหารพื้นเมืองของชุมชน และเครื่องมือที่ใช้ในการทดลองครั้งนี้คือ ตัวรูปแบบ การอนุรักษ์อาหารพื้นเมืองของชุมชน และแบบสอบถามความพึงพอใจ สถิติที่ใช้ในการวิจัย ครั้งนี้ได้แก่ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน ผลการวิจัยพบว่า (1) อาหารพื้นเมืองของคน ในชุมชนอำเภอบ้านลาด มีความชำนาญ ในการประกอบอาหารพื้นเมืองมาทุกรุ่นทุกสมัย สืบทอดมาเป็นภูมิปัญญาของชุมชน และมีวิธีการประกอบอาหารที่ง่าย โดยใช้พืชผักใน ท้องถิ่นที่หาได้ทั่วไปตามฤดูกาลประกอบอาหาร อาหารพื้นเมืองที่พบเป็นส่วนใหญ่คือ อาหารคาวและอาหารหวาน ประกอบด้วย แกงหัวตาล น้ำพริก ผักต้ม แกงส้ม ต้มกะทิ หน่อไม้ดอง ส่วนอาหารหวาน ขนมตาล ขนมข้าวตู น้ำตาลสด ข้าวเกรียบว่าว เป็นต้น (2) ได้รูปแบบการอนุรักษ์อาหารพื้นเมืองของชุมชน โดยใช้เทคโนโลยีสารสนเทศ อำเภอ บ้านลาด จังหวัดเพชรบุรี ในรูปแบบของเว็บแอพพลิเคชั่นสามารถสืบค้นข้อมูลอาหาร พื้นเมืองของอำ เภอบ้านลาดผ่านเครือข่ายอินเทอร์เน็ตได้สะดวกรวดเร็วขึ้น (3) ผู้ใช้พึงพอใจต่อการใช้งานรูปแบบการอนุรักษ์อาหารพื้นเมืองของชุมชนอำเภอบ้านลาด โดยผลการประเมินความพึงพอใจต่อการใช้งานรูปแบบการอนุรักษ์อาหารพื้นเมืองของ ชุมชน จากผู้ใช้ทั่วไปจำนวน 30 ท่าน ปรากฏว่าผลการประเมินความพึงพอใจ อยู่ในระดับ มาก

MODEL FOR CONSERVATION OF THE LOCAL FOOD USE INFORMATION TECHNOLOGY BANLAT DISTRIC PETCHABURI

The purposes of this research ware to 1) study the knowledge of the local food in community 2) develop a model for conservation of the local food using information technology BanLat district Petchaburi 3) The study satisfaction of the local community to model from of food conservation. The data was statistically analyzed by using mean and standard deviation The research results were as follows: (1) BanLat food of the people in the community with expertise in cooking native to each generation inherited the wisdom of the community and a simple method of cooking using local vegetation is very seasonal cooking. Food that is mostly comprised of savory and sweet dishes include Curry roasted brown head, Vegetable soup and chili sauce, Hot and sour, Bamboo sprout soup with coconut milk ,sugar palm cupcake, dried rice balls, palm juice, grilled/round rice crisp. (2) The conservation form of the local food in community BanLat district, Phetchaburi Province, using technology in the form of a web application. You can search local information of BanLat via the Internet is more convenient. (3) User satisfaction with the use Model for food conservation of the local BanLat district Petchaburi. The satisfaction from the results it appears that you are 30 user satisfaction at a high level. The results form Model for conservation of the local food use information technology BanLat district Petchaburi. Can help preserve local cultural heritage of the local community to continue this. It is also the center for the children and those who do learn well.
