Abstract

Abstract: The objective of this study was investigation of factors affecting carcass quality of Kamphaeng Saen feedlot steers. Those factors were consisted of contemporary group were farm (FM), year and season at slaughter (KYS), sex (SX), 5 groups of feedlot steers (TY; born from performance tested bull, calf of registered bull of Kamphaeng Saen beef breeders association, calf of no information, calf born from imported frozen semen and calf of charolais frozen semen from Department of Livestock Development). The others factors were 4 groups of number of Teeth (PT; deciduous teeth and 1, 2 and 3 pairs of permanent teeth). The study traits were slaughter weight (KWT), chilled carcass weight (CHWT), dressing percentage (DP), lean percentage (LP), marbling score (MBS) and loin eye area (LEA) from 2,720 beef records since 2012-2019. The results showed influence of contemporary groups (FM and KYS) had highly significant influence to all traits (P<0.01). Sex had not influence for all traits (P>0.05). Type of feedlot steers (5 groups) influence on LEA (P<0.05). Age at Slaughter (PT) influence on KWT, CHWT and MBS (P<0.05) and interaction between TY×PT affect on CHWT and MBS (P<0.05). Which the criteria for accepting cattle for slaughter focus on slaughter weight and give the price of chilled carcass weight, marbling score and age at slaughter. Therefore, should focus on the selection of growth performance resulting in less period fattening. In addition, cattle that have information better carcass quality especially for loin eye area than cattle without information.
