Study on the antiglycation activities of young shoot leaves in nine edible plants used in Thai cuisine for health promotion

Abstract
This study aimed to investigate the antiglycation activities of ethanol extract in nine young shoot leaves used in Thai cuisine. The highest total phenolic content was observed in Cratoxylum formosum (167.80 ± 1.61 mg GAE/g DW). The highest flavonoid content was found in Azadirachta indica (20.13 ± 0.51 mg QE/g DW), with the strongest antioxidant capacity using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) scavenging assay exhibited in Schinus terebinthifolius (264.31 ± 25.45 mg AAE/g DW). The inhibition of advanced glycation end products (AGEs) of leaf extracts equivalent to 1 mg/mL based on dried herb weight was studied in vitro using the bovine serum albumin (BSA)-glucose model. The extracts showing more than 50% inhibition of total AGEs after incubation at 40 °C for seven days demonstrated significant antiglycation activity, consisting of Cratoxylum formosum, Azadirachta indica, Sesbania grandiflora, Moringa oleifera, Schinus terebinthifolius, and Careya sphaerica. Cratoxylum formosum leaf extract has the highest percentage of inhibition on certain compounds associated with oxidative stress and glycation. The following results were revealed: total AGEs (82.84 ± 0.93%), methylglyoxal-BSA (97.21 ± 0.29%), dityrosine (98.59 ± 0.26%), and pentosidine (99.50 ± 0.14%). The findings of this work might be useful for further study involving the examination of each plant in depth to identify complementary dietary benefits for health promotion.
