บทคัดย่อ

ประเทศไทยตั้งอยู่บนบริเวณที่มีความหลากหลายทางชีวภาพสูงเป็นอันดับต้น ๆ ของโลก ส่งผลให้เป็นพื้นที่สำคัญในการผลิตอาหารของโลกและมีชนิดอาหารที่หลากหลาย ในแต่ละภูมิภาคต่างก็มีความโดดเด่นของอาหารที่แตกต่างกัน สาเหตุจากลักษณะภูมิประเทศ ภูมิอากาศ และวัฒนธรรมที่แตกต่างกัน ปัจจุบันวิกฤติอาหารกำลังเป็นหัวข้อสำคัญที่ทั่วโลกให้ความสำคัญและกังวลถึงผลกระทบที่เกิดขึ้น จุดประสงค์ของบทความนี้เพื่อกระตุ้นให้ผู้เกี่ยวข้องให้ความสำคัญและจัดการอาหารไทยอย่างเป็นระบบ มิฉะนั้นอาหารไทยที่มีเอกลักษณ์ทางวัฒนธรรมอาจสูญหายไปและขาดแคลน ส่งผลให้เป็นวิกฤตเช่นเดียวกับที่หลายประเทศ    ทั่วโลกกำลังเผชิญกันอยู่ในปัจจุบัน

Abstract

Thailand is located on one of the highest world’s biodiversity. As a result, the country is an important area for world’s food productions and varieties. Each region of Thailand shows differently type of foods because of different geography, climate and cultural. Food crisis is currently one of the most important topics for global concern. The aim of this article is to encourage and to focus on systematically Thai food management for the stakeholders. Otherwise, the cultural identity Thai food is probably disappear, and Thai food crisis will consequently arise similar to many countries where are presently facing.
