Production of Triphala Instant Drinking Powder using Foam-mat Drying

Abstract

The purpose of this research is to develop Triphala drinking powder using a foam mat drying process by studied the appropriate temperature and time for extracting Triphala at temperatures of 60, 80 and 100 ºC for 60, 90 and 120 minutes. It was found that Triphala juice from the extraction at 100 ºC for 120 minutes had a highest amount of total soluble solid at 10.90±0.36 °Brix and gallic acid content at 0.55±0.12%, respectively. Then studied the suitable encapsulating agent for foam mat drying process, including egg white powder, egg white powder mixed with glyceryl monostearate (GMS) in a ratio of 3: 2 and egg white powder mixed with sodium carboxylmethyl cellulose (CMC) in a ratio of 3: 2. It was found that the condition using egg white powder mixed with CMC is the most suitable encapsulating agent which provided Triphala powder with 0.21±0.03 water activity (aw), 97.21±1.58% solubility, 359.40±6.34% overrun, color value of L* 53.01±0.39, a* 5.32±0.80, b* 13.67±3.28, 0.25±0.02 g/cm3 and gallic acid content of 3.42±1.18%.
