A Comparison of Quality and Preference of Some Baby Corn Varieties for Canning

Abstract

Thirteen varieties of baby corn planted at Kasetsart University, Kampang San campus were canned. The canned samples were tested for qualities and consumer preference in texture, color, odor and taste. The result revealed that Thai supersweet comp #1 DMR baby corn which is the supersweet and open-pollinated variety with more than 80% resistance to the downy mildew disease had low decreasing in % TSS during canning process, and had the highest preference scores in texture, odor, and taste. These are due to its sweetness, beautiful yellow color and other good appearance.
