Design and Development of Pickled Mango Peeler to Enhance Value Added for Its Affiliated Products

Abstract
Design of a pickled mango peeler using 4 – set of knives blade rotor, driven by 0.5 hp of 3–phase motors individually. In peeling test, 4 parameters were designed, i.e., knife speeds of 200, 225, 250 and 275 rpm, blade knife height at 2.5 and 3.0 mm, stirring control at 65 and 70 rpm, and test without and with water sprayed. The accepting criteria will be based on the average weight loss at 12–15 percent and the average peeling depth of 1.75–3.00 mm. It was revealed that treatment T12 (without water) with knife speed at 275 rpm, blade knife height 2.5 mm, stirring control 70 rpm, met the optimum with average weight loss 14.40 ± 3.92 percent and average peeling depth 2.98 ± 0.48 mm. The best operation result was in T21 (using water sprayed) and revealed that knife speed 200 rpm, blade knife height 3.0 mm, stirring control 65 rpm, got average with weight loss 13.70 ± 1.40 percent and average peeling depth 2.57 ± 1.25 mm. At the best condition capacity of peeling was 60 kg/h with 0.30 unit of power consumed. If the electricity price is 3.76 Baht per kW – h, the cost is only 1.13 Baht per 60 kg comparing to manual peeling at 26.85 kg/h. So the capacity is around 2.23 times faster than manual peeling. Payback return is in 91 days at 480 kg/d of production rate.
