ฤทธิ์การต้านออกซิเดชันของผงใบอ่อนข้าวหอมมะลิเพื่อการพัฒนาผลิตภัณฑ์คุกกี้เพื่อสุขภาพ

บทคัดย่อ

งานวิจัยนี้มีวัตถุประสงค์เพื่อประเมินฤทธิ์การต้านออกซิเดชันของผงใบอ่อนข้าวหอมมะลิที่ผ่านกระบวนการผลิต 3 รูปแบบ ได้แก่ ชาคั่ว ชาหมัก และชาดำ และศึกษาความเป็นไปได้ในการนำผงชาดังกล่าวไปใช้เป็นส่วนผสมในการพัฒนาผลิตภัณฑ์คุกกี้เพื่อสุขภาพ โดยทำการวิเคราะห์ฤทธิ์การต้านออกซิเดชันด้วยวิธี DPPH และ FRAP รวมถึงปริมาณสารประกอบฟีนอลิกรวม (TPC) และฟลาโวนอยด์รวม (TFC) จากนั้นจึงนำผงชาที่มีความเข้มข้นแตกต่างกันไปใช้ในการผลิตคุกกี้ และประเมินการยอมรับทางประสาทสัมผัสของผู้บริโภค ผลการวิเคราะห์พบว่า ผงชาคั่วมีฤทธิ์การต้านอนุมูลอิสระสูงสุดเมื่อพิจารณาจากค่า FRAP (3.40±0.08 mg Fe/DW) ซึ่งสูงกว่าผงชาหมักและผงชาดำอย่างมีนัยสำคัญทางสถิติ (p≤0.05) และมีฤทธิ์การต้านอนุมูลอิสระตามวิธี DPPH (19.98±0.69 mg TE/DW) สูงกว่าผงชาดำอย่างมีนัยสำคัญทางสถิติ (p≤0.05) แม้ว่าปริมาณสารประกอบฟีนอลิกรวม (15.96±0.37 mg GAE/DW) และฟลาโวนอยด์รวม (104.22±0.26 mg RE/DW) ในผงชาคั่วจะน้อยกว่าผงชาดำและผงชาหมักก็ตาม อย่างไรก็ตาม การที่ผงชาคั่วมีค่า FRAP สูงที่สุด บ่งชี้ว่าผงชาคั่วอาจมีสารออกฤทธิ์ต้านอนุมูลอิสระชนิดอื่นที่มีประสิทธิภาพในการให้อิเล็กตรอนสูงกว่าผงชาหมักและผงชาดำ ซึ่งเป็นกลไกสำคัญในการยับยั้งการเกิดอนุมูลอิสระ นอกจากนี้ ค่า DPPH ที่สูงกว่าผงชาดำยังส่งเสริมฤทธิ์การต้านอนุมูลอิสระของผงชาคั่วอีกด้วยส่วนผลการประเมินทางประสาทสัมผัสของคุกกี้ที่ผลิตโดยใช้ผงชาคั่วทดแทนแป้งสาลี พบว่า ผู้บริโภคให้การยอมรับผลิตภัณฑ์ ซึ่งแสดงให้เห็นถึงศักยภาพของผงใบอ่อนข้าวหอมมะลิ โดยเฉพาะอย่างยิ่งในรูปแบบของผงชาคั่ว ในการเป็นส่วนผสมที่มีคุณค่าทางโภชนาการและเป็นแหล่งของสารต้านอนุมูลอิสระสำหรับพัฒนาผลิตภัณฑ์อาหาร
