Abstract

The purposes of this study were to study food sanitation, food hygiene knowledge and practices in 4 child centers. Food sanitation data were collected from checklists of physical characteristics of the cafeteria, biological contamination tests by SI- 2 test kit, and answers of questionnaires by 25 people on hygiene knowledge and practices of the food-handlers. The data were analyzed in terms of descriptive statistics and percentages.


Results of this study showed the most of item which not passed food sanitation standard were 1) Strength of dining tables and chairs 2) Cookers don’t wearing cap or hairnet, it’s was found 75.0%. Results of the biological contamination tests showed coliform bacteria are contaminate in food, hands of food-handlers, and food containers which 80.0%, 75.0%, and 58.3% respectively. In term food hygiene knowledge of food handlers, they are in good level (80.0%) and for practice evaluation found in good level (88.0%).


The study recommended to the persons in charge of the child centers training courses for the handlers about hygiene of the canteen, monitoring food quality, and personal hygiene of food handlers to improve food hygiene.
