Application of quality function deployment, Kano’s model and design of experiment for design and development of scaphium drink

Since health-conscious people need beverages that are beneficial to the body and easy to drink, this research aimed to study the characteristics of scaphium drink products that consumers want and to design and develop scaphium drink products that meet the needs of consumers. This research was an application of quality function deployment techniques, along with Kano's model and design of experimental, including sensory testing using the 9-Point hedonic scale test method, considering the appearance characteristics, namely color, smell, taste, viscosity, and overall liking. The steps started with a survey of 414 consumers who experienced dringking scaphium drink. The results of the design and development of scaphium drink beverages, using 80% of the important technical specifications were adopted as guidelines for design and development, after which the experimental plan was developed. By mixing with 16 formulas of related herbs and testing the sensory by 34 untrained panelists, the results of the consumer testing showed the most satisfaction on 2 formulas: Formula 9 consisting of scaphium drink 500 mg 500 mg, green tea and roselle 50 mg equally, asiatic pennywort and chrysanthemum 100 mg equally, stevia 0.1 mg, and water 200 mg and Formula 16 consisting of scaphium drink 500 mg, green tea 50 mg, roselle 100 mg, asiatic pennywort 50 mg, chrysanthemum 100 mg, stevia 0.1 mg, and water 200 mg. Both formulas had a satisfaction score of 6.59. The results of the research study showed that scaphium drink is beneficial to the body and easy to drink.
