สภาวะเหมาะสมในการผลิตผงจิ้งหรีดเอกซ์ทรูดด้วยวิธีพื้นผิวตอบสนองและการปรับปรุงคุณสมบัติด้วยกรดอินทรีย์

บทคัดย่อ
จิ้งหรีดแหล่งโปรตีนทางเลือกคุณภาพสูง การแปรรูปเป็นผงจิ้งหรีดที่มีโปรตีนสูงจะช่วยเพิ่มมูลค่าของวัตถุดิบได้ กระบวนการเอกซ์ทรูชันเป็นการแปรรูปอาหารที่ทำได้ง่าย ให้ผลผลิตสูง ของเสียน้อย รวมทั้งสามารถปรับสูตร รูปร่าง เนื้อสัมผัส สี กลิ่น-รส และคุณค่าทางโภชนาการได้ตามที่ต้องการ นอกจากนี้ การเติมไฮโดรคอลลอยด์ มอลโทเดกทรินซ์ และกรดอินทรีย์ร่วมกับกระบวนการเอกทรูชันจะช่วยปรับปรุงคุณสมบัติของผงจิ้งหรีดเอกซ์ทรูดได้อีกด้วย การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อหาสภาวะเหมาะสมในการผลิตผงจิ้งหรีดด้วยกระบวนเอกทรูชันเพื่อให้มีคุณสมบัติสูงสุดด้วยวิธีการพื้นผิวตอบสนอง (Response Surface Methodology; RSM) รวมถึงศึกษาผลของการปรับสภาพด้วยกรดอินทรีย์ต่อการปรับปรุงคุณสมบัติของผงจิ้งหรีดเอกซ์ทรูด (Extrude cricket powder; ECP) การหาสภาวะเหมาะสมในการผลิต ECP ศึกษา 3 ปัจจัยคือ อัตราส่วนของผงจิ้งหรีด (Cricket powder; CP) ต่อมอลโทเดกซ์ทริน (Maltodextrin; MD) (x1) ปริมาณคาร์บอกซีเมทิลเซลลูโลส (Carboxymethyl cellulose; CMC) (x2) และปริมาณน้ำ (x3) เพื่อให้ค่าตอบสนองสูงสุดของปริมาณโปรตีน ความสามารถในการละลาย และดัชนีความขาว โดยวางแผนการทดลองแบบการออกแบบส่วนผสมกลาง (Central composite design; CCD) มีทั้งหมด 20 การทดลอง จากการวิเคราะห์การถดถอยด้วยวิธีการพื้นผิวการตอบสนองพบว่า สภาวะที่เหมาะสมในการผลิตผงจิ้งหรีดเอกซ์ทรูดคือ อัตราส่วนของ CP:MD, ปริมาณ CMC และปริมาณน้ำ เท่ากับ 83:17, 1.6% และ 41% โดยน้ำหนักผงจิ้งหรีด ตามลำดับ ณ สภาวะดังกล่าวให้ค่าตอบสนองสูงสุดของปริมาณโปรตีน (63.0%) ความสามารถในการละลาย (74.9%) และดัชนีความขาว(46.7) เมื่อทวนสอบความน่าเชื่อถือของแบบจำลอง พบว่าค่าที่ได้จากการทดลองและค่าที่ได้จากการทำนายมีค่าความคลาดเคลื่อนน้อยกว่า 5% แสดงให้เห็นว่าแบบจำลองที่ได้มีความน่าเชื่อถือในการทำนายค่าตอบสนอง นอกจากนี้ การปรับสภาพ ECP ด้วยกรดอินทรีย์ ได้แก่ กรดซิตริก กรดฟูมาริก และกรดแอสคอร์บิก ที่ระดับความเข้มข้น 0, 0.2, 0.4, 0.6, 0.8, และ 1.0% โดยน้ำหนักผงจิ้งหรีด พบว่า เมื่อระดับความเข้มข้นของกรดอินทรีย์ทั้งสามชนิดสูงขึ้นส่งผลให้ผงจิ้งหรีดเอกซ์ทรูดมีความสามารถในการละลาย ดัชนีความขาว และความสามารถในการต้านจุลินทรีย์มากขึ้นอย่างมีนัยสำคัญ และการเติมกรดฟิวมาริกที่ระดับความเข้มข้น 1% ทำให้ได้ผงจิ้งหรีดเอกซ์ทรูดที่มีคุณสมบัติสูงสุด ผลการวิจัยนี้ยืนยันได้ว่า RSM เป็นวิธีที่มีประสิทธิภาพในการหาสภาวะเหมาะสมในการผลิตผงจิ้งหรีดเอกซ์ทรูด รวมทั้งการเติมกรดอินทรีย์ช่วยปรับปรุงคุณสมบัติของผลิตภัณฑ์ได้ ซึ่งนับว่าเป็นการเพิ่มมูลค่าให้กับจิ้งหรีดในการใช้ประโยชน์เป็นวัตถุดิบในผลิตภัณฑ์อาหารโปรตีนสูงได้อย่างมีประสิทธิภาพ
