Development of an Internet of Things (IoT) System for Monitoring Carbon Dioxide Degassing Behavior of Roasted Coffee Beans

Abstract

This research CO2 developed an IoT system to monitor CO2 release from roasted Arabica coffee beans. The aim was to see how the CO2 affects coffee quality. This research used an SCD41 sensor and an ESP32 board to measure CO2 inside a sealed container for 25 days. Then brew CO2 coffee on days 1, 5, 9, 13, 17, 21, and 25 using the SCA protocol. After brewing, tested the coffee for total soluble solids (TSS), acidity (TA), electrical conductivity (EC), pH, and taste. The results showed that beans release most of their CO2 in the first 2-3 days. This heavy gas release blocks water from entering the coffee grounds, making the brew weak. By days 17–25, the gas levels had dropped and became stable. Because of these changes, the coffee was extracted much better and showed higher chemical values. The taste testers also gave their highest scores during this period, especially on day 21. Therefore, our IoT setup successfully tracked the degassing process. It was found that letting the beans rest for 17 to 25 days gives the best cup quality.
