Investigation of Prediction of Fat in Coconut Milk by Using Near Infrared Spectroscopy

บทคัดย่อ

Near infrared spectroscopy was used to predict the fat content in coconut milk for comparing with the traditional method (Gerber method). A set of 100 samples of coconut milk was used to measure the absorbance by using FT-NIR spectrometer in range 870-2,500 nm in diffuse reflectance mode. The calibration models for quantitative analysis of moisture content were established by partial least squares regression (PLSR) using full cross validation. The PLSR model of the absorbance data from coconut milk gave R2 of 0.9887%, RMSEP of 0.411%, RPD of 12.1 and Bias of -0.258%. From this result, this PLSR model can be applied. Finally, the results suggested that the near-infrared spectroscopy can be potentially used to predict the fat content in coconut milk in fast and accuracy.
