Total anthocyanin content in five plant parts of purple waxy corn germplasm

Abstract
A large number of waxy corn germplasm are purple waxy corn. This is an important source of anthocyanin, but, under current situation, only purple kernel part of the crop is consumed as food, leaving other anthocyanin-containing parts of the crop such as cob, silk, husk and stem residue as farm waste. The objective of this study was to assess the total anthocyanin content in five parts (kernel, cob, silk, husk and stem) of 31 purple waxy corn accessions and four checks varieties. The experiment was carried out in the dry season 2010/11 (November to March) at the Research Farm, Faculty of Agriculture, Khon Kean University, Khon Kean. The results showed that Khow Niaw Khow Kam had the highest total anthocyanin content. Silk had total anthocyanin content higher than another parts. Silk of Khow Niaw Khow Kam had the highest total anthocyanin content. It had a tendency that darker purple parts had higher anthocyanin content. The results pointed out that other anthocyanin-containing parts can be used as alternative sources of anthocyanin to reduce the risk of many diseases and the industry can use the remaining parts of purple waxy corn to increase the efficiency of the industry.
