Abstract
Morphological characteristics and postharvest physico-chemical quality of strawberry fruit cv. Praratchatan 80 and No. 329 were studied. Strawberry fruit were harvested at 25, 50 and 75% color break. Shape and physico-chemical quality of fruit were determined. The results showed that conic shape was the major appearance found in strawberry fruit cv. Praratchatan 80, while long wedge shape was mostly found in strawberry fruit No. 329 in all color break stages. Strawberry fruit cv. Praratchatan 80 had greater total soluble solids and vitamin C content; but lower firmness, titratable acidity, phenolic compound content, antioxidant activity and storage life compared to those of strawberry fruit No. 329. However, there was no significant difference in anthocyanin content in both cultivars. For color break study, strawberry fruit harvested at 25% color break had the longest storage life, and had higher fruit firmness than that of fruit harvested at 75% color break. In addition, the results indicated that anthocyanin contents increased by level of color development. Nonetheless, the difference of color break had no influence on total soluble solids, titratable acidity, vitamin C content, phenolic compound content and antioxidant activity.
