การผลิตมันแกวผงโดยการทำแห้งแบบโฟมแมต: คุณสมบัติทางกายภาพและ การยอมรับทางประสาทสัมผัส

บทคัดย่อ

การศึกษากระบวนการผลิตมันแกวผงโดยวิธีการทำแห้งแบบโฟมแมต (foam-mat drying) เพื่อนำไปผลิตเป็นผลิตภัณฑ์ผงชงดื่ม มีวัตถุประสงค์เพื่อศึกษาอิทธิพลของชนิดและความเข้มข้นของสารทำให้เกิดโฟมที่มีต่อคุณสมบัติทางกายภาพและการยอมรับทางประสาทสัมผัส ใช้สารทำให้เกิดโฟม ได้แก่ มอลโทเดกซ์ทริน (Mal) ร้อยละ 10 และ 15 และโซเดียมเคซีเนต (NaCas) ร้อยละ 5 และ 10 ทำแห้งที่อุณหภูมิ 80 องศาเซลเซียส พบว่าการใช้ Mal ได้โฟมมันแกวที่มีการขยายตัวที่น้อยกว่า
แต่มีความคงตัวที่สูงกว่าการใช้ NaCas และมันแกวผงที่ได้มีคุณภาพด้านสีและการละลายที่ดีกว่า ปริมาณผลผลิตที่ได้
ไม่แตกต่างกันอย่างมีนัยสำคัญ (P>0.05) เมื่อใช้ที่ความเข้มข้นเท่ากัน ผลิตภัณฑ์ผงชงดื่มได้รับการยอมรับทางประสาทสัมผัสใกล้เคียงกัน แต่จุดเด่นของผลิตภัณฑ์ที่ใช้ Mal คือ มีคะแนนรสชาติและการละลายสูงกว่าตัวอย่างที่ใช้ NaCas อย่างมีนัยสำคัญทางสถิติ (P<0.05) ดังนั้นการทำแห้งแบบโฟมแมตโดยใช้ Mal จึงมีความน่าสนใจในการผลิตเชิงพานิชย์แบบ
