Main Article Content
Abstract
Suphan water chestnut is a Geographical Indication (GI) product of Wang Yang Subdistrict, Si Prachan District, Suphan Buri Province. Currently, the number of consumers of boiled water chestnuts is limited. Although the demand for Suphan water chestnuts as a raw material for food processing industries remains continuous, the popularity of boiled water chestnuts as a ready-to-eat food has declined. Therefore, the development and promotion of Suphan water chestnuts should emphasize the promotion of the boiled water chestnut market by using scientific and technological information to support consumers’ purchasing and consumption decisions. This study aimed to analyze the nutritional value of boiled Suphan water chestnuts harvested at 10 months. The results showed that boiled Suphan water chestnuts contained 75.64±0.20 g/100 g moisture, 78.23±0.44 kcal/100 g energy, less than 0.01 kcal/100 g energy from fat, less than 0.01 g/100 g fat, 2.68±0.05 g/100 g protein, and 2.82±0.14 g/100 g dietary fiber. In addition, they contained 2.82±0.02 mg/100 g vitamin C, 0.74±0.03 mg/100 g iron, and 0.45±0.04 mg/100 g zinc. These findings indicate that boiled Suphan water chestnuts contain nutritional components that can be used as information for nutritional communication with consumers, supporting their purchasing and consumption decisions. The findings also provide information to support market management in Wang Yang Subdistrict, Si Prachan District, Suphan Buri Province.
